Shake Shack Adds Special Truffle Items To Menu

As if Shake Shack needed another way to become even more indulgent, the fast food chain has partnered with New York City’s leading importer of rare and speciality foods, Regalis Foods, on a limited-edition, truffle-focused menu. The limited-edition menu, launching on Tuesday, December 1, will be available at only four Shake Shake locations: New York’s Upper West Side and Madison Square Park restaurants and Los Angeles’ Glendale and El Segundo locations. It will be available through December 31.

“We love crafting fun, delicious menu items in an elevated way, inspired by our fine dining roots and with an emphasis on premium ingredients,” says Mark Rosati, Culinary Director at Shake Shack. “We collaborated with Regalis Foods for this truffle-focused menu because of their extraordinary reputation in the restaurant industry. [Founder] Ian Purkayastha and his team are one of the most respected luxury food purveyors in the country, and we’re happy to work with them and support them during these difficult times.”

The star of Shake Shack and Regalis Foods’ truffle-focused menu is a black truffle sauce made with Regalis’ USDA Organic Black Truffle Arbequina Oil ($40 for 250 ml, for those who want to try it at home). The oil, flavored organically with real truffles, is the only truly natural truffle product on the market, as nearly 98% of truffle products sold globally are artificially flavored with synthetic lab-created essences and aromas.

The Californian extra virgin olive oil infused with Valencian black truffles will be used in a Black Truffle Burger (a Roth Cheese gruyere cheeseburger topped with black truffle sauce and crispy shallots on a toasted Martin’s potato bun), a Black Truffle ‘Shroom Burger (crispy portobello mushroom filled with melted muenster and cheddar cheeses, topped with black truffle sauce and shredded lettuce on a toasted Martin’s potato bun), and a Black Truffle Shack Stack (the gruyere cheeseburger and ‘Shroom Burger topped with real black truffle sauce on a toasted Martin’s potato bun).

Black Truffle Sauce will also be available on the side, to add to any menu item for $1.50. The sauce is made with Regalis Foods’ Black Truffle Arbequina Olive Oil, plus caramelized mushrooms, thyme, fresh bay leaf, port and madeira fortified wines, and parmesan cheese. Aged sherry vinegar is added to balance the umami and overall richness, that will meld with the specialty truffle burgers priced at $8.89.
